Such burgers are usually made from chopped chicken meat and fat, removed from the whole chicken carcass, because in this case, the minced meat turns out to be more juicy. But our step-by-step recipe is based on the method of cooking Kiev cutlets, with the only difference being that we will not be preparing the chops from a chop, but chopped chicken breast fillet with the addition of butter.


To begin with, we will make the filling for the chops


  • One teaspoon of oil is removed to lubricate the mold, and the remaining piece is left for half an hour on the kitchen table.
  • The butter, softened at room temperature, should be mixed with dill, a pinch of salt and ground in gruel with one garlic clove.
  • After that, put a small elongated oil lumps on a plastic bag laid on a board with a teaspoon, cover them with a film and put them in the freezer.

Now we will cook the stuffing


  • After the specified time we shift the soaked loaf into a homogeneous mush and, if necessary, squeeze out excess milk.
  • From the bread slices we follow the crusts, leaving one crumb, and pour it with warm milk for a couple of minutes.
  • Chicken breast, garlic teeth, soaked bread and onions, cut into large slices, pass through a small nozzle of the meat grinder twice, so that all the ingredients are thoroughly crushed and mixed.

We shift the stuffing into a volumetric bowl, salt it at the rate of 1 tsp. without a slide for 1 kg of minced meat, we drive in an egg, add pepper and mix the mass very carefully, beating it against the walls of the bowl or table.

We make big flatbreads with a thickness of 1 cm from the stuffing, in the center of each of them we put the frozen frozen butter with greens and tightly close the stuffing, forming an elongated patty.
Roll off the ready-made cues in breading and spread on greased parchment lined on a baking sheet.
We send burgers to a hot oven for 25-30 minutes.

How to cook chops from chopped chicken meat


  1. We load grated potatoes, sliced ​​chicken, salt, mayonnaise, dried garlic into a blender bowl and grind everything at high power for about 3 minutes so that everything is well mixed, and the mass is not granular, but homogeneous, like thick and sticky cream.
  2. The onion is crumbled with a very small, sharp knife into cubic pieces, after which we mix the slices with the minced meat.
  3. We put on an intensive heating of the pan, pour half the volume of olive oil into it and heat it until the smoke appears.
  4. In the meantime, we make small round bits with mince, roll them in breadcrumbs and send them for frying.
  5. As soon as all the chops are in the pan, begin to turn them, starting with the very first.
  6. After that, the cooking temperature is reduced to a minimum, cover the pan with a lid and boil the burgers for 15 minutes, until they are baked inside and the onion is soft.
  7. After this time, we increase the flame under the pan to medium and fry the patties until crisp for 2-3 minutes.
